Spice Rubbed Lamb Chops

Wash and pat dry 12 sirloin lamb chops (about 3 lbs).  Place in a ziploc bag with 1 teaspoon coriander, 1/2 teaspoon cumin, 1/2 teaspoon cardamon, 1/2 teaspoon nutmeg, 1/2 teaspoon salt, and 1/2 teaspoon pepper.  Leave in refrigerator overnight.

Remove meat from refrigerator and allow to come to room temperature.  Light grill.  Add meat to grill and grill on each side until meat is at your desired doneness (use meat thermometer).

The meat comes out fragrant with a smoky spiced coating while the meat is tender.  Serves 4-6.
