Pico de Gallo

I made my pico de gallo through trial and error so please, use this recipe loosely to find a combination that you love.

Ingredients:

  • 4 ripe tomatoes
  • 1 green pepper
  • 1 red onion
  • cilantro
  • 1 clove garlic, finely minced
  • 2 jalapeno peppers, stemmed, seeded, and finely chopped
  • 1 lime, freshly juiced
  • salt, to taste

Directions:

  1. Cut tomatoes in half and squeeze out juice and seeds.
  2. In food processor, separately process tomatoes, green pepper, red onion, and cilantro until desired texture is reached.
  3. In a large bowl, stir together tomatoes, about 1/4 cup green pepper, 1/4 of red onion, 1/4 cup cilantro, garlic, jalapeno peppers, lime juice, and 1/4 tsp salt.
  4. Taste mixture.  Add additional green peppers, onion, cilantro, and salt to obtain desired flavor.
  5. Cool in refrigerator and serve with chips, Mexican food, or as a substitute for ketchup.
