Curry Mania

Last night, I decided to go meatless.  With the CSA booty and my hankering for Indian food, I made both pumpkin curry and cauliflower curry.  They were paired with basmati rice and whole wheat naan.

The verdict was… yummmm.  The meals were very satisfying and perfect for the slightly cool evening.  As an added benefit, I didn’t wake up with that full bloated feeling I sometimes get from eating too late at night (we ate at 9:30 pm).  We have leftovers to spare and I’m looking forward to stashing some in the freezer for the coming weeks.

Now off to find more vegetarian (aka meat-lite) recipes.
